After a cool & damp Christmas/New Year, the coastal breezes thankfully assisted in avoiding disease pressure in our vineyard, as well as Mundulla. A long, dry ripening season featured consistently warm, sunny days & cool nights without extreme heat or wind related stress. These ideal conditions have resulted in sublime fruit quality right across the board, from early-picked sparkling to late-ripening red varieties.
The fruit is machine harvested in the cool of the night and primary ferment is kept simple to preserve the clean and fresh nature of the variety.
Secondary ferment was using the charmat method where the ferment occurs in stainless steel pressure tanks capturing the natural carbon dioxide to create the joyful bubbles that make this such a playful drink.
It shows everything that we like in a good sparkling - ripeness of fruit. Delicate aromas of apple blossom are cushioned into some pillowy carbonation, providing a wonderfully soft edge to a blanketing palate of golden-delicious apple and honeydew melon texture. Some crunchy acidity ensures the finish is crisp, with just enough length.
