A very late harvest.Cool and cloudy. Winter rainfall was good,and the wet conditions continued into Spring. Summer was mild without any extended heatwave periods. Cloudy weather returned during the ripening period. A nervous period of waiting ensued as grape phenolic ripening was particularly slow. 2023 was not a vintage in which to over cropn or to panic and pick too early. Patience was the name of the game.The resulting wines are a littlelower in alcohol, higher in fresh acidity and show wonderful fragrance.
Harvested 13th and 15th March, 2023. 0% to 38% whole bunches added to the fermenter depending on the parcel. Total whole bunch percentage 27%. Remaining fruit de-stemmed (not crushed) and machine-sorted toremoveshrivelled berries. Cold soaked for 3 to 5 days priorto the beginning of natural fermentation (no yeastadded). Gentle pump overs (no plunging) to minimise over-extraction of aggressive tannin.Basket pressed to oak after 15 to 20 days in fermenter. Mixture of new (48%) and older (52%) French oak puncheons (500L). All parcels aged separately on fine lees with minimal sulphur additions. Blended and bottled early December 2024. Unfiltered.
